Snap the green beans if fresh. Soak the ramen and green beans in boiling water for 3-5 minutes or until the noodles reach the desired doneness, teasing it apart with a fork as needed. Rinse and drain, rinsing in cool water if packing for bento. Stir in 1 tsp sesame oil to the noodles.
Combine soy sauce, vinegar, mustard, sugar, and 1/2 tsp sesame oil to make dressing. Put in a small container if packing for bento, or keep separate until ready to serve if preparing for immediate consumption.
Toast the ham as needed. Rinse, dry, and shred the lettuce into bite-sized pieces. Slice the ham into thin strips. Whisk the egg and a dash of salt and pepper together, then fry in 1 tsp vegetable oil over medium heat in a nonstick pan. Stir constantly until crumbled.
